"What should we make for the graduation party?”I asked my better half when we sat in the backyard in one of June’s warm evenings. “There’s still a long time until he finish school” she answered, “not really, it’s June already” “well, maybe he should stay another year in high school…” she mumbled. Both her and I tried to repress the thoughts of the empty nest. It wasn’t easy with all the upcoming events, prom, pre prom, post prom or another end of the school parties, and of course the graduation that he helped organize. “I think we should make meat. A lot of meat, maybe shawarma, or wings and spare ribs with your sauce, the one he loves” she suggested “maybe it’ll make him stay at home one more year” I smiled “and what about the vegetarians?” I asked “you’ll figure out something” she answered.
“What is that?” asked the young one when we set the food on the counter “it’s a cheese and spinach pastry” I answered “for the vegetarians” “can I try?” he added “sure” I said. ”Can you please save some of it for later?” he asked after he finished eating “only if you promise to stay one more year at home” said my wife as she smiled and hugged him.
Ingredients
1 puff pastry sheet
Filling
1 ½ cup pecorino cheese grated
1 ½ cup cheddar cheese grated
1 ½ cup feta cheese grated
10 oz fresh spinach
7 sundried tomatoes chopped
1 egg
¼ tsp nutmeg
½ tsp salt
½ tsp black pepper
2 TBS water
1 egg for brash
Sesame seeds
Heat 2 TBS of water in a deep pan or pot. Wash spinach and add to the pan. Saute until tender, about 5 minutes. Let cool.
Heat oven to 400 f. In a deep bowl mix all filling ingredients. Roll puff pastry on a floured working surface to a 18X12 inch rectangle. Place filling in the center of the rectangle lengthwise, making a cylinder shape out of it. Brush beaten egg on the edge of the rectangle, Fold in the short edges and then the long ones. Place pastry on a baking sheet covered with parchment paper. Brush with beaten egg, sprinkle with sesame seeds and prick with fork in several places at the top of the pastry. Bake for 25 minutes until golden.
