When a phone call from my better half starts with "I know it's kind of last minute,” we both know what comes next. “What is it this time?” I asked, “it’s a meeting at work.” “When?” I asked, ״ this evening”, came the answer in a soft voice after not so short pause. “This evening? As in a few hours?” “Yes,” she answered, “I totally forgot about it.” “Do you have anything in mind?” I asked thinking what can be made within this time frame, “not really, whatever you can will be good,” and with a smile she added, “I trust you”. Yes, I know that smile so well that I can see her smiling even when she is at the other end of a phone call. “Ok, I’ll see what I can do when I get home.”
“Mom went to her eye doctor and will come back later,” the younger son updated me as I entered the door. I went through the cabinets thinking what can be easily prepared from ingredients that are always in the house. I left the outcome in a box on the counter and left for a meeting. A couple of hours later I got a text, “How do you call these pastries? And more importantly, can you send me the recipe?”
Ingredients
3 ½ cups flour
2 tsp baking powder
1 tsp salt
¾ cup sour cream
⅓ cup cottage cheese
2 cups cheddar cheese grated
1 ¾ sticks butter (7 oz) room temperature
½ cup sliced green olives sliced
⅓ cup chives chopped
A beaten egg for brushing
Sesame seeds (optional)
Place all ingredients by order in a mixer bowl with a beater paddle. Mix until dough is formed. Place dough in a floured bowl, cover with plastic wrap and chill for an hour.
Warm oven to 350 f. Divide dough into two balls. Roll each ball to 1/8 of an inch thick disk. Place a large round plate on top of the dough and with a sharp knife cut the extra dough. Remove plate and using a pizza cutter slice dough to 8 triangles. Roll each triangle from wide side forward to croissant shape. Place on a baking sheet covered with parchment paper, brush with beaten egg, spread sesame seeds over and bake for 35 minutes until golden.
