Chicken Patties in Lemon and Cilantro

 

There are those days that Murphy comes to visit you. Those days where anything that can go wrong, goes wrong. It’s not about major crises, it’s just that everything you planned goes the wrong way. It was supposed to be a state of the art planned and productive day. And then, FedEx delivers the wrong package...

and you have to wait at home for them to replace it. You have to cancel the meeting that took days to set because the hard drive that you need for this meeting is in the Fedex package. So you decide to work from home. You sit at your desk, take your laptop out of your bag and turn it on only to find out that your internet connection is down due to service outage. And then, when you decide that since everything has been going wrong, at least dinner will go right. You go into the kitchen only to find an empty refrigerator. In those days when life gives you lemons, just add chicken patties and cilantro, and an hour later the world will smile back at you.

 

 

Ingredients

Chicken patties

1 lb ground chicken

1 cup cilantro finely chopped

1 onion grated

3 garlic cloves minced

1 egg

1 lemon zest

¼ cup breadcrumbs

2 TBS lemon juice

1TBS seltzer

1 TBS olive oil

1 tsp salt

1 tsp black pepper

 

Lemon sauce

 

2 TBS olive oil

1 onion sliced

3 garlic cloves sliced

1 hot green pepper sliced (optional)

2 lemons sliced

1 tsp turmeric

1 tsp sugar

1 tsp salt

1 tsp black pepper

2 TBS lemon juice

2 cups water

Chicken patties preparation 

Place all patties ingredients in a deep bowl, mix well, cover with plastic wrap and refrigerate for one hour. Work with wet hands to form disk shaped patties ½ inch high.

In a large pan heat canola oil in half the height of the patties. Fry for 1 min each side only to light golden. Take pattie out and place on paper towel to absorb oil. (you can skip the frying, but Ifeel that it adds a great flavor to the dish).

Lemon sauce
Heat oil in a deep pan over high heat. Add onion and fry for 5-6 minutes. Add garlic and hot green pepper and fry for one more minute. Place the lemon slices over the onion in one layer, so they will cover the bottom of the pan. Add spices, lemon juice and water and bring to boil. Place the patties on the lemons in one layer and bring to boil. Cover the pan, and cook on low heat for 30 minutes. For serving spread chopped cilantro over the patties. Serve hot.
