"Look what I bought for you” said my better half as she came back from another day of shopping and placed the bag on the table. We moved to the US with bare minimum equipment, and shopping was our main pastime in the first few months. When we packed before moving, we divided most of our stuff between family and friendssaying that everything is cheaper in the US, so we can buy new stuff. We found ourselves running around with a baby and a young kid bored to death looking for basic housewares. “What were we thinking when we left all our pots?” asked my spouse as we stood staring at the shelves packed with pots and pans in Macy's trying to figure out their collection.
“What is this?” I asked as I opened the box trying to figure out exactly it was and how to use it. “A roasting clay pot” she answered, “the instructions are inside”. More than a few new and unknown dishes were bought because our baby boy got tired of shopping and expressed it in a way that made us leave the shop quickly without really paying attention to what we had bought. This is how our clay pot was one of the first dishes we bought in the US.
Ingredients
8 chicken thighs
1 package frozen fava beans 1 lb 12 oz
1 onion
3 garlic cloves
1 red hot pepper
1 cup cilantro
½ cup white wine
Marinade
¾ cup olive oil
1 tsp sweet paprika
1 tsp paprika
1 tsp cumin
1 tsp turmeric
½ tsp cardamom
½ tsp ground cloves
1 tsp salt
1 tsp black pepper
Place all marinade ingredients in a small bowl and mix well. Place the chicken thighs in a deep bowl and pour half of the marinade on them. Rub the marinade on the thighs. Cover and refrigerate for 2 hours.
Submerge and soak the clay pot in cold water for 10-15 minutes. Place all ingredients beside the chicken in the pot, pour the other half of the marinade and mix well. Add the chicken thighs to the pot placing them between the fava beans, add half a cup of white wine.
Do not heat the oven! Place pot in the cold oven and set temperature to 450 F. roast for 2 hours.
Take pot out and place on a wood cutting board to protect it from extreme temperature changes. Do not place hot clay pot on a cold stone countertop.
