Ground Beef Stew with Beans and Vegetables

 

I love to cook almost any kind of food,  mediterranean food, moroccan food, french, Iraqi, vietnamese or any other cuisine, as long as it is tasty. But one of my favorites is the one I call “what ever there is in the fridge”It starts when I ask my better half what she’d like for dinner and and the answer is that she doesn't really mind. I ask my younger son what he would like and his answer is “whatever you feel like.” So, this time, I defrosted ground beef, thinking I can make meatballs in some kind of sauce or maybe kebab, When I  like my diners said “whatever I feel like”.entered the kitchen and opened the freezer I saw red beans that I cooked and froze some time ago and thought “it's a good day for chilli con carne.” I chopped onions, some garlic and opened the refrigerator to take out tomatoes. Next to the tomatoes there was a red bell pepper. “Yes, it will fit,” I thought and took it out. Then I saw the carrots, “carrots are always good in a dish” I said to myself as I grabbed them too. And if I put carrot then I need celery too. I added some spices, hot red pepper, a glass of red wine and let it all cook. ״What is there to eat?” asked my younger son storming in, starved after his basketball practice. “It’s some kind of a dish like chilli con carne but not exactly” I answered. Yes, he did like it, and my spouse too.

 

 

Ingredients

1 ½ lb ground meat

1 onion diced

1 red bell pepper

2 carrots sliced

2 celery stalks diced

3 garlic cloves minced

1 red hot pepper sliced (optional)

3 tomatoes diced

2 cups cooked red beans

1 tsp paprika

1 tsp smoked paprika

1 tsp chilli powder

1 tsp cumin

1 tsp allspice

½ tsp cardamom

3 bay leaves

1 TBS thyme

1 TBS sugar

1 tsp salt

1 tsp black pepper

2 TBS tomato paste

2 TBS worcestershire sauce

1 cup red wine

1 cup tomato sauce

2 TBS olive oil

Heat olive oil in a pot or deep pan. Add onion and fry to golden. Add garlic and hot red pepper and fry one more minute. Add ground beef and fry until meat changes its color. Stir and break meat while frying. Add all other ingredients and spices and mix well. Bring to boil, lower the heat, cover and cook over low heat for about one and a half hours.
