I spent many fun-filled days at my childhood-friend Dan’s house. One of the times, his mom offered us something to eat and asked if I like casserole. “Very much” I answered. Moroccan casserole was one of my favorite dishes.It was one of “dad’s dishes”, one that mom knew how to prepare, but somehow when dad made them they had a unique flavour. We kept on playing, but my mind was already on the casserole. When Dan’s mom called us to the table, I hurried to sit down. In the middle of the table was a plate with a pale dish and broccoli heads popping out. Dan immediately helped himself to a piece, while I was waiting for the casserole. “Look how polite your friend is” Dan’s mom said as she placed a piece of the dish on my plate. “Thank you” i said “but I’d like to wait for the casserole” I added. “This is the casserole” Dan’s mom answered. I took a small bite, not only that it wasn’t a “casserole” it wasn’t that tasty. “Dad can you please make us casserole?” I asked when I returned home.
Ingredients
4-5 cooked potatoes cut into quarters
3 hard boiled eggs
1 onion diced and fried
2 cups green peas and carrots thawed
1 cup parsley chopped
1 cup cilantro chopped
6 eggs lightly bitten
1 TBS turmeric
1 tsp paprika
1 tsp ras el hanut
¼ tsp baking powder
1 tsp salt
1 tsp black pepper
2 TBS oil
Heat oven to 350 f. Place cooked potatoes and hard boiled eggs in a deep bowl and mash. Add all other ingredients beside the oil and mix well. Oil a 9x13 pan. Pour mix in and level. Bake about 45 minutes until brown.
