Years later, when I faced as a father the same uncompromising logic in my adolescent sons, it was clear to me that I had no chance. Well, I thought, that is the time to make Moroccan vegetable patties. The same ones that I’d never even taste as a teenager.
Ingredients
2 potatoes grated
1 zucchini grated
1 carrot grated
1 onion cut to quarters
3 garlic cloves cut in half
½ cup parsley
½ cup cilantro
2 eggs
½ cup breadcrumbs
1 tsp sweet paprika
1 tsp paprika
1 tsp ras el hanout
1 tsp turmeric
1 tsp salt
1 tsp black pepper
Oil
Place the onion, garlic, parsley and cilantro in a food processor bowl with metal blade and finely chop. Place all ingredients and spices in a large deep bowl and mix well. Cover with plastic wrap and refrigerate for an hour.
With wet hands take a piece of the mix and roll to a ball the size of a ping pong ball. Press to flatten the ball to the shape of a disk.
Heat oil in a large pan over high heat. Place patties in hot oil 3-4 at a time so the oil won’t cool down. Fry to golden, about 1-2 minutes each side. Serve warm or cold.
