Olives Cheese & Sumac Breadsticks

 

"Smells so good” said my better half as she got home after a long day at work. “I see you got back to use the present we bought you”.  When we moved to the USA we couldn’t find any bread that we loved in our area, so one of the first presents my wife and kids bought me was a bread machine. “I’d like bread with garlic” said my older son “dad, I want bread with sunflower seeds” the young one add, “maybe you can make a rosemary dried tomato bread?” my better half asked. At this point I was not sure if they bought that gift for me or for themselves, yet I was as excited as they were. I would set the machine to bake the bread in the morning and we would wake to a house full of the scent of fresh bread. There were times that I’d make two or three different breads in a day. With time the enthusiasm from the machine has diminished, the selection of bread in the shops has increased as well as their quality, and the machine found its way to the basement shelf between the ice cream maker and the fondu dish. Since there is nothing like the smell of fresh bread filling the house, I occasionally bake special kinds of breads.

 

 

Ingredients

3 ½ cups flour

¾ cup rye flour

2 TBS dry yeast

⅓ cup warm water

1 tsp sugar

1 tsp salt

1 TBS sumac

1 TBS olive oil

1 ⅓ cups water

½ lb smoked gouda diced

1 cup sliced olives

3 garlic cloves minced

1 egg

Caraway

Sesame seeds

In a small bowl mix dry yeast, sugar and warm water. Let stand 5 min until small bubbles are formed.

Place both flours in a mixer bowl with kneading hook. Add yeast mix and stir. Add salt, sumac olive oil and water and knead for about 9 minutes. Add cheese, olives and garlic and stir to combine. Place dough in an oiled bowl, cover with plastic wrap and let rise for one hour.
