Peanut Cookies

 

"Mom bought those cookies that we love!” my younger brother howled at me as I entered home back from school. “How do you know?” I asked “it’s not passover yet” “I saw mom take them out of the shopping bag” he answered. My taste buds responded immediately and demanded immediate satisfaction. “Where is mom?” I asked, trying to avoid drooling. “She went to the grocery store” my brother replied. I rushed to the cookie cabinet, already tasting the unique flavor of the cookies. I took out the cookie jar and opened it. The disappointed look on my face was unmistakable. “These are just regular cookies” I angrily turned to my brother “you tricked me.” “no I didn’t” he answered “I really saw them! She took them out of the shopping bag.” “So where are they?” “I don’t know, I didn’t see where she put them.” “I know where they are” I said, dragging a chair and put it close to the counter. I climbed up on it, then on to the counter. When I stood on my tiptoes I could reach the top cabinet handle. I tried to open it to no avail, I was too short. “Bring me something to stand on!“ I yelled at my brother. He ran out of the kitchen, came back with our toy box, and placed it on the counter. “Hold it so I won’t fall” I said and climbed on it. As I tried to steady myself on the rocking box, I managed to open the cupboard. All the effort paid off. The cabinet was packed with all kinds of passover cookies. The front door opened just as I managed to get the packet of cookies out. “You can’t wait for Passover? mom said with a smile “ Here, let me help you so you won’t end up on the floor” said mom as she entered the kitchen.

 

 

Ingredients

3 cups unsalted roasted peanuts

¾ cup sugar

2 eggs

1 tsp baking powder

1 TBS vanilla sugar

½ tsp cinnamon

½ tsp ground cloves

Sugar powder for cover

Grind the peanuts coarsely in a food processor with a metal blade. Add sugar and continue grinding until fully combined. Place mixture in a deep bowl and add remaining ingredients (besides the sugar powder). Mix well until sticky paste is formed. Let rest for one hour.

Heat oven to 350 f. Place sugar powder in a large plate. Work with wet hands to roll ping pong size balls out of the mixture. Roll the balls in sugar powder until well covered. Place in baking sheet covered with parchment paper or baking silicone mat and bake until the cookies turn golden on the edges and crack slightly, about 15 minutes. Cookies should still be soft when removed and harden a bit after they cool.
