When Isabelle (a fake French name) ordered ceviche I stared terrified at her plate. As one who grew up on cooked food, mainly stews, when I first saw raw fish I didn’t know how to eat it. To me, raw fish was the equivalent of a live fish swimming in the bathtub before becoming a Rosh Hashanah dish. As I already told, in my childhood I refused to even taste fish, and only in my 20’s I discovered that fish are actually tasty. But raw fish?? Well, how could i stand Isabelle’s green eyes and charming smile, in a small Latin Quarter restaurant in Paris at twilight... My affair with Isabelle ended pretty fast, but the one with ceviche is still going on today.
Ingredients
1 lb sea bass fillet cut into ½ inch x ½ inch cubes
½ red onion thinely sliced
½ cup cilantro chopped
⅓ cup mint chopped
2 small radishes thinely sliced
1 small red hot pepper seeded and chopped
1 mango cut into ½ inch X ½ inch
½ cup lime juice
⅓ cup olive oil
2 Scallion chopped for garnish
1 tsp salt
1 tsp black pepper
Mix all ingredients in a bowl. Let stand 10-15 minutes, sprinkle with scallion and serve.
