Wings in BBQ Pomegranate Sauce

 

"Everybody likes wings” my better half answered when I asked her what should we make for a BBQ. I knew that for her a BBQ with no wings is like a vegetarian meal for a carnivore. For someone like me, who thinks that wings are nice but not really a meal, this generalization seemed a bit exaggerated. “30? 40? How many?” I kept asking, “30?? At least double if not triple” she answered. “But we have only 15 guests and 4 of them are kids”.”You’re right, she added “maybe we have to make quadruple” giving me the look that this is the end of the discussion.

So what did we have there? Kebab, beef skewers, steaks, of course salads, few side dishes, and... wings! Not triple, as my wife wanted, but close enough. “I hardly got to taste the wings” she complained while clearing the empty wings tray. “I saved you some,” I smiled and took out the plate I hid earlier. I guess everybody really does like wings.

 

 

Ingredients

3-4 lb wings

1 tsp garlic powder

1 tsp paprika

1 tsp salt

1 tsp black pepper

BBQ Pomegranate Sauce

½ cup port wine

½ cup red wine vinegar

¼ cup worcestershire

¼ cup soy sauce

½ cup oil

½ cup pomegranate syrup

¼ cup pomegranate molasses

½ cup honey

2 TBS tomato paste

½ cup brown sugar

4 garlic cloves

1 tsp chili

1 tsp paprika

1 tsp smoked paprika

½ tsp allspice

½ tsp ground cloves

2 TBS dry onion flakes

1 tsp salt

1 tsp  black pepper

Heat oven to 400 F. Cut the wings tips and discard. Cut the wings in two at the joint and place in a deep bowl. In a small bowl mix garlic powder, paprika, salt and black pepper. Spread the spice mix over the wings and rub so all wings are covered. Place the wings on a rack on a rimmed baking tray  and roast for 50 minutes until done. Remove from oven and place in a bowl.

Increase oven temperature to 450. Mix all marinade ingredients in a bowl, and pour over the wings. Transfer wing to a baking pan covered with parchment paper and roast for about 15 minutes until brown.
